When I go to a café to write – that’s my treat – the muffins and cakes always tempt me and I wonder how these cooks make them look and taste so delicious. I stumbled on this Apple Tea Cake recipe which is absolutely delicious – something I like to think Clover might cook for her café in beautiful Kallista – plus my top secret – secret.
Apple Tea Cake
My top secret – well, secret – If the butter is stratight out of the fridge, like mine often is, chuck it in the microwave for a few seconds and make sure it’s really soft. That way, when you cream the butter with the sugar, it gets really fluffy. I’ve been doing this lately, and it makes the cake light and fluffy. Might be just me and I’ve never heard of the tip before, but it works!
Cream the butter and dextrose with an electric mixer. Then add the egg and mix until combined.
Gradually add the flour and milk alternately, along with the salt.
Pour into greased round cake tin. Decorate the top with the apple slices and sprinkle with nutmeg and extra dextrose. – I sprinkle cinnamon and sugar on the top. Hmmm.
Bake at 170 degrees Celsius for 30 minutes. Cool cake in tin, before turning out. Enjoy with whipped cream or custard.
